Recipe: Stone Fruit Bruschetta

Ready in 25 minutes

Serves  8 people

Ingredients

  • 1 baguette as crostinis
  • Olive Oil 
  • Salt and Pepper
  • Stone fruit of choice – I  use apricots and peaches. 
  • Strawberries
  • Handful of Basil
  • Hot honey
  • Balsamic Glaze
  •  Goat cheese – I  prefer Laura Chenel Mango Habanero Flavor

Preparation

  1. Slice your baguette into Crostinis Cut up your crostinis into even slices. Place on a baking tray and coat with olive oil, with a sprinkle of salt and pepper. Place in the oven at 350 F until they’re golden brown 
  2. Take out your goat cheese Allow your goat cheese to come to room temperature for easy spreading.
  3. Make your stone fruit mixture Cut up your strawberries and stone fruits and place into a bowl. Add your sliced basil and sprinkle salt and pepper. Add drizzles of hot honey and balsamic glaze. Mix. 
  4. Assemble Crostinis  Take your golden crostinis out of the oven and allow to cool before handling. Then, spread a generous amount of goat cheese on each piece, before topping with your stone fruit mixture. 
  5. Serve and Enjoy!  Like any Sophisticated Spread, presentation is everything. Place on a wooden board or beautiful plate to enhance your experience, and enjoy!i 

Tips

Use a bit of leftover fresh basil to garnish the top of each crostini!
